Pear Cake and Trentodoc

Homemade Sunday pear cake still calls for refreshment with pronounced but not too crisp acidity. So it was a Trentodoc Millesimato Zero Dosage by Revi from the 2017 vintage. This Chardonnay and Pinot Noir blend has been on its lees for around 40 months. This procedure gave it the necessary creaminess on the palate to support the texture of the pears. The aromatics of lemon, pear, yellow apple with subtle herbal notes also complement the cake excellently.

In terms of sweetness sensation, I find this very combination exciting. The slight sweetness of the pear cake makes the Trentodoc seem even fresher and more straightforward. Just the way I like it. It’s undoubtedly a fine line, but it’s worth trying.
